  • 1 teaspoon turmeric powder
  • 2 teaspoons garam masala
  • 1 teaspoon cumin powder
  • Salt, to taste
  • Juice of 1 lemon

For the Rice

  • 2 cups basmati rice, rinsed and soaked for 30 minutes
  • 4 cups water
  • 2-3 whole green cardamom pods
  • 4-5 whole cloves
  • 1-2 bay leaves
  • 1 stick of cinnamon
  • Salt, to taste

For the Biryani

  • 3 tablespoons ghee or vegetable oil
  • 2 large onions, thinly sliced
  • 2 green chilies, slit (optional, for extra heat)
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh mint leaves, chopped
  • Saffron strands (optional, for garnish)

For Garnish

  • Fried onions (store-bought or homemade)
  • Boiled eggs (optional)
  • Additional cilantro and mint, for garnish

Instructions

1. Marinate the Chicken

  • In a large bowl, combine the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, salt, and lemon juice. Add the chicken pieces and mix well to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.

2. Prepare the Rice

  • In a large pot, bring 4 cups of water to a boil. Add the soaked basmati rice, green cardamom pods, cloves, bay leaves, cinnamon stick, and salt. Cook until the rice is 70% cooked, about 5-6 minutes. Drain the rice and set aside.

3. Cook the Chicken

  • In a large, heavy-bottomed pot or Dutch oven, heat 3 tablespoons of ghee or oil over medium heat. Add the sliced onions and sauté until golden brown and caramelized, about 10-15 minutes. Remove half for garnish.
  • Add the marinated chicken to the pot, along with the slit green chilies. Cook for about 10-12 minutes until the chicken is cooked through and the oil starts to separate from the gravy.

4. Layer the Biryani

  • Reduce the heat to low. Spread half of the cooked rice over the chicken, followed by half of the chopped cilantro and mint. Add the remaining rice on top and sprinkle with the remaining herbs.
  • If using saffron, dissolve a few strands in 2 tablespoons of warm milk and drizzle it over the top layer of rice for added flavor and color.

5. Cook the Biryani

  • Cover the pot tightly with a lid. You can seal the edges with dough (made from flour and water) to trap the steam if desired. Cook on low heat for about 20-25 minutes. This allows the flavors to meld and the rice to finish cooking.

6. Serve

  • Once done, gently fluff the biryani with a fork, being careful not to break the rice grains. Serve hot, garnished with fried onions, boiled eggs, and extra cilantro and mint.
